Paper Bags
Mushrooms in a paper bag is advice so universal it barely needs repeating. But the why behind it matters, because it tells you when else paper bags are the right tool.

Paper bags aren’t ideal for leafy greens — they can over-dry the leaves. And they’re the wrong choice for anything you’re misting or adding water to. But for high-moisture produce you want to keep dry, paper beats cloth.
Damp Tea Towels and Kitchen Cloths
A damp tea towel wrapped around leafy greens is, arguably, the most effective and cheapest plastic-free storage method there is. Moisten the cloth, wring it out thoroughly so it’s damp but not wet, wrap your greens or herbs loosely inside, and store in the fridge. The Golden Rules of Plastic-Free Vegetable Storage
Before getting vegetable-specific, three principles apply universally.
Understand Your Three Storage Zones
The fridge is for cold-preferring vegetables: leafy greens, broccoli, cauliflower, Brussels sprouts, green beans, asparagus, herbs (except basil), mushrooms, carrots, beets, celery, leeks, and most cut produce.
The counter is for ethylene-producing fruits and vegetables that ripen at room temperature: tomatoes, avocados, bananas, stone fruit, cucumbers, and eggplant (both suffer cold damage in the fridge).
The cool, dark pantry or root cellar is for vegetables that need cool air but not refrigeration: potatoes, sweet potatoes, winter squash, cured onions, garlic, and pumpkin.
Getting the zone right matters more than the container. The best cloth bag won’t save a tomato that’s been refrigerated.
The Ethylene Rule
Ethylene-producing produce: apples, bananas, avocados, tomatoes, peaches, plums, mangoes, pears, and melons. Among vegetables, ripe tomatoes are significant producers.
Ethylene-sensitive produce: broccoli, kale, leafy greens, Brussels sprouts, carrots, potatoes, cucumbers, and asparagus.
Keep your fruit bowl away from your vegetable storage. Don’t put apples next to broccoli in the fridge. Don’t hang bananas above the potato basket. Bananas are particularly aggressive ethylene producers and should be stored away from virtually everything you don’t want ripening ahead of schedule.

To Wash Before Storing, or Not?

Leave unwashed anything you’re storing for three days or more. Moisture from washing speeds up mold growth and cellular breakdown. Root vegetables, carrots, beets, broccoli, and most fridge vegetables should go in unwashed and be rinsed just before use.
The rule: dry storage means longer shelf life. Pre-washing only makes sense for produce you’re actively prepping.
The exception is berries. Wash them right before eating, not before storing — even a small amount of surface moisture causes mold within twenty-four hours.
Separate Your Fruits and Vegetables
Most fridge crisper drawers have humidity controls. High-humidity is for vegetables; low-humidity is for fruit. Use them. If your fridge has only one drawer, store fruit in a separate bowl on a shelf rather than in the drawer with vegetables.

Why greens go slimy: excess moisture trapped by plastic, combined with ethylene from nearby produce, degrades cell walls fast. A damp cloth absorbs just enough moisture to keep leaves from desiccating without creating the wet environment that breeds rot.
Lifespan: 5–7 days for spinach and arugula; 7–10 days for kale and chard. Whole heads of lettuce last longer than pre-separated leaves — leave the head intact until you need it.
For bulk-prepped greens: wash, spin-dry thoroughly, and store layered with dry paper towels inside a glass container. Replace the paper towels after two days if they’re visibly damp.
Brassicas (Broccoli, Cauliflower, Cabbage, Brussels Sprouts)
Brassicas are ethylene-sensitive and produce their own sulfurous compounds when stored improperly.
Broccoli and cauliflower: store unwashed in a breathable cotton bag or loosely wrapped in a damp cloth in the fridge. Don’t seal them — they need airflow. Keep away from apples and other ethylene producers. Lasts 5–7 days.
Cabbage: store whole and unwashed — the outer leaves protect the interior. If halved, press the cut face against a plate or cover with a beeswax wrap. A whole cabbage lasts 2–3 weeks. A cut cabbage lasts 3–5 days.
Brussels sprouts: leave them on the stalk if you bought them that way. They last significantly longer attached (up to 2 weeks) than separated (5 days). Store in a breathable bag in the crisper.
Herbs — And Why Basil Is an Exception
Most herbs (parsley, cilantro, dill, chives, mint) do well in cold storage. Treat them like cut flowers: trim the stems at an angle, place them upright in a glass jar with an inch of water, cover loosely with a damp cloth or light cloth bag, and store in the fridge. Change the water every two days. They’ll last 1–2 weeks.
Basil is the exception. It’s tropical and suffers cold damage below 50°F (10°C). Refrigerating basil turns it black within twenty-four hours. Keep basil at room temperature in a jar of water on the counter — same cut-flower method, just at counter temperature and away from direct sunlight. It’ll stay fresh for up to a week and will often keep growing.
Rosemary, thyme, and sage can be stored in the fridge rolled in a slightly damp cloth — no water jar needed. They last 2–3 weeks this way.
Asparagus, Celery, and Carrots — The Water Method

Mushrooms, Green Beans, and Other Delicate Vegetables
Mushrooms: always paper, never plastic, never sealed. Place them in a single layer in a paper bag, fold the top loosely, and store in the main fridge compartment — not the crisper, which is too humid. They’ll last 5–7 days. If your mushrooms came pre-packed in a plastic tray with a film cover, remove the film when you get home, replace with a loose sheet of paper, and store paper-side up.
Green beans: store dry in a paper bag or breathable cotton bag in the crisper. Don’t wash until use. Lasts 4–6 days. If they’ve started to wrinkle, revive them in a bowl of cold water for 15–20 minutes — they’ll firm up.
Snow peas and snap peas: same as green beans. Dry, breathable, cool. They deteriorate quickly once moisture is introduced, so leave washing to the last moment.
Corn: corn loses up to 40% of its natural sugars within hours of being picked, making it one of the most time-sensitive vegetables in your fridge. Store it unwashed, in its husk, in the crisper, and eat it within one to two days. If you can’t, blanch and freeze immediately.

Half a cucumber: press the cut face down on a small plate or cover with a beeswax wrap. Store in the fridge. Lasts 2–3 days.
Half an onion: place cut-face-down in a small glass container with a lid, or cover with a beeswax wrap. Keep away from other produce — onion vapors affect the flavor of nearby items. Lasts 5–7 days.
Half a cabbage or cauliflower: cover the cut face with a beeswax wrap and store in the crisper. Lasts 3–5 days.
Half a lemon or lime: place cut-face-down in a small glass jar or cover with a beeswax wrap. Lasts 3–4 days.
Half an avocado: leave the pit in. Cover the cut face with a beeswax wrap or press a piece of onion against it (the sulfuric compounds slow browning — this is an actual technique, not folklore). Store in the fridge for 1–2 days.
Half a bell pepper: cover the cut end with a beeswax wrap or place cut-face-down in a glass container. Lasts 3–4 days.
Vegetables That Don’t Belong in the Fridge

Tomatoes
Never refrigerate them. Cold temperatures halt the ripening enzymes responsible for a tomato’s flavor compounds, converting sugars into starches and permanently altering the texture. A refrigerated tomato becomes mealy, flavorless, and watery — and there’s no way to reverse it.
Store tomatoes at room temperature, stem-side down (this slows moisture loss through the scar). If they’re not yet ripe, keep them out of direct sunlight. If they’re fully ripe and you can’t eat them within two days, roast and freeze them in a glass jar. Don’t refrigerate.
Onions and Garlic
Onions need cool, dry, dark, and well-ventilated conditions — a mesh bag or an open wooden bowl in a cupboard or pantry. Light exposure turns them green and bitter. Moisture causes rot. Plastic traps both.

Garlic stores well in a small open clay pot or a mesh bag at room temperature. Keep it away from moisture. A whole head lasts 3–6 months properly stored; individual cloves last 1–2 weeks once separated.
Potatoes and Sweet Potatoes
Potatoes belong in a cool (45–55°F / 7–13°C), dark, well-ventilated place — a pantry, basement, or cupboard away from any heat source. Never in the fridge: cold temperatures convert potato starches into sugars, producing an oddly sweet taste and, when cooked at high heat, potentially elevated levels of acrylamide (a compound formed during the Maillard reaction that some researchers classify as a probable carcinogen).
Do not store potatoes near onions. This is one of the most useful storage rules most people don’t know. Onions emit gases that accelerate sprouting in potatoes, shortening their storage life from months to weeks. Store them in separate areas of the kitchen. Keep garlic away from potatoes for the same reason.
Sweet potatoes store at room temperature, away from sunlight, in a cool dry place. They prefer slightly warmer conditions than white potatoes (55–60°F / 13–16°C) and are damaged by refrigeration — the cold causes a condition called “hardcore,” where the center of the sweet potato stays hard after cooking. Winter Squash and Eggplant

Eggplant suffers chill injury below 50°F (10°C), which shows up as dark spots, softening, and bitter flavor. Store at room temperature and use within 3–5 days. Keep away from tomatoes and bananas.
Cucumbers
Most people refrigerate cucumbers automatically. They shouldn’t — or at least, not for long. Cucumbers are chill-sensitive and suffer cold damage at temperatures below 50°F (10°C), which shows up as water-soaked spots, accelerated decay, and a mushy texture.
If you’re eating them within two to three days, keep cucumbers on the counter at room temperature, away from tomatoes and bananas. For longer storage, wrap loosely in a dry cloth and place in the warmest part of the fridge — the door shelf rather than the crisper drawer.
The Water Method
Several vegetables store best when their stems are kept in water, the same way you’d store cut flowers. It keeps them hydrated and metabolically stable, extending freshness by days or weeks. No special equipment required.
How it works:
1. Trim the base of the stems at a slight angle to maximize surface area for water uptake.
2. Fill a glass jar or cup with 1–2 inches of cool water.
3. Place stems down in the jar so the cut ends are submerged.
4. Change the water every two days to prevent bacterial growth.
5. Store in the fridge for most vegetables; counter for basil.
Asparagus: the biggest beneficiary of this method. Asparagus spears stored upright in water in the fridge (loosely covered with a damp cloth) stay firm for 7–10 days. Left flat in a bag, the same asparagus goes limp within three days.
Celery: keep stalks (whole or trimmed) upright in a jar of water in the fridge. Alternatively, wrap tightly in clean tin foil — celery responds well to foil, which allows ethylene to escape while retaining some humidity. Lasts 2–3 weeks either way.
Green onions and scallions: trim roots slightly and store upright in a jar with an inch of water on the counter. They’ll stay fresh for weeks and often keep growing. Snip from the top as needed.
Fresh herbs (parsley, cilantro, dill, mint): trim stems and store upright in a jar of water in the fridge with a light cloth covering. Change water every two days. Lasts 1–2 weeks.
Carrots (reviving, not primary storage): if carrots have gone limp, submerge them in a bowl of cold water for 30–60 minutes — they’ll absorb water through osmosis and firm up. A Note on Berries

Berries are among the most commonly wasted items in the refrigerator, and the instructions for storing them without plastic are specific.
Never wash berries before storing — surface moisture dramatically accelerates mold spread. Store them in a single layer if possible, or loosely in a glass container without compressing or stacking.
